Simple Beef and Barley Crock Pot Soup for Two

We are having a real cold snap here in Michigan this past week.  It has been in the teens (Fahrenheit) outside.  COLD!    It was really time to have some comfort foot.

Since we are on a diet, it is hard to have comfort food and still fit into your calorie budget, but this seemed to work.   The trick is that you have to trim off all the fat from the chuck roast and go lightly on the barley.   Someone like me who doesn’t get very many calories can only have about a cup of it, so you must have a salad with it.  My husband gets to eat more than I do, so altogether this fed two of us with a little bit left over for his lunch.

Today I whipped up a batch of crock pot soup.  Prep time was about 15 minutes, mostly trimming fat and cutting vegetables.   5 hours later, I had myself a rich, tasty, warming soup fit for a freezing day. Continue reading

Lemon Garlic Marinated Chicken Breasts with Rosemary and Thyme

Back in May, my husband and I started changing our diet in an attempt to lose some weight.  We also started working out, bought some exercise equipment, and have been more mindful about moving more and eating less.

Fast forward 7 months to December, and we are really doing great.    We are not done yet, but we both agree that even when (and if) we get to our ultimate goal weight, we cannot go back to the way we were eating previously. Continue reading

Cilantro Lime Marinated Chicken Thigh Skewers

As my husband and I continue our search for healthier recipes, we are taking some steps outside of our comfort zone and trying new things.  We have made barbecued chicken skewers in the past, but slathering the chicken with BBQ sauce, while not completely evil, is not the best choice due to all the sugar in the sauce.

I searched Pinterest for some other options and got the idea for the Cilantro Lime skewers, but didn’t find a recipe that was perfect for us.   We don’t like a lot of garlic or some of the other spices like Cayenne, so I made up a recipe that we have had a couple of times now.  It’s pretty good.  It’s not “OMG” good, but it is easy, different, tasty,  and it is pretty low calorie.  (MyFitnessPal says it is about 166 calories, 22 g. protein, 1 g sugar, and 2 g carbs.  Not too bad.) Italian Subs (Hoagies, Grinders) (Buccilli’s Pizzeria Type)

I used to live “up north” in Michigan.   The town I lived in had a restaurant which served the most amazing submarine sandwiches — and they delivered!  I enjoyed many a late night Italian submarine sandwich, but since I moved away (a long time ago now), I have not found another that I liked as well.

Necessity is the mother of invention, or something like that…. so here is my knock-off version.
