Blender Potato and Cheddar Soup

3 med to large Potatoes (Russet, Idaho, Golden, or whatever you have).

1/2 C shredded cheddar

2 Tbsp bacon (optional)

2 c Milk or Half & Half (I use 1 c Milk, 1 C half & half)

Rosemary (to taste) (I use about 1/2 tsp)

Dill Weed (to taste) (I use about 1/2 tsp)

Ham Au Gratin

Ham Au Gratin

 

Ingredients:

  • About 4 cups peeled and sliced red or golden potatoes
  • 2 Tbsp Flour
  • 2 Tbsp Butter
  • 1 C Milk
  • About 4 C Grated Cheddar
  • Leftover Spiral Cut ham (about 6 slices)

Instructions:

Peel and slice potatoes to about 1/8” thick.  Rinse.

Put into 9×9 square baking dish (buttered or sprayed with PAM)

Add about 2/3 of the grated cheese over the potatoes.

In saute pan, melt butter.  Add flour and mix well into butter.  Add milk and stir over medium heat until well blended and lumps disappear.

Pour onto potatoes / cheese and mix well until they are all well blended.

Cover with foil and bake 45 min at 450 degrees.

In the last 10 min, uncover and put ham and remaining cheese on top.   Finish baking for 10 more min.

If you use other types of potatoes, such as Idaho, you might want to blanch them first by cooking them partially in the microwave and draining  / drying them prior to baking.  Sometimes these potatoes don’t get soft unless you do so.

Dill and Lemon Pepper Potato Salad

Dill & Lemon Pepper Potato Salad

Ingredients:

  • About 6 medium to large golden potatoes peeled and cubed
  • 4 eggs – hard boiled
  • 1 C Mayonnaise
  • Lemon Pepper (to taste)
  • Dill Weed (to taste)
  • About 3 sprigs celery, washed and chopped
  • Salt & Pepper (to taste)
  • Prepared yellow Mustard

Instructions

Peel and cube potatoes a little bigger than dice sized.

Boil until cooked.  (you can boil the eggs in the shell along with potatoes)

When you can pierce potatoes with a fork, remove from heat and drain.  Do not over boil or they will be mush.

Cool potatoes.  Peel eggs.

Put potatoes in large bowl.  Add mayo, celery and about 1 Tbsp mustard.  Add spices to taste.

Cube the hard boiled eggs and add to mixture.  Mix well and refrigerate.

(We affectionately call these “Hillbilly Hashbrowns”)

Ingredients

  • about 6 medium golden potatoes, peeled and cubed (Dice sized)
  • about 3 tbps bacon grease
  • Salt & pepper
  • Paprika

Instructions:

Melt bacon grease in frying pan.

Add potatoes.  Fry until golden brown.  (Add more bacon grease if it dries out.  You want to keep them frying, not drying out).

Sprinkle with paprika to add color.

Add salt & pepper to taste

  • 3 Tbsp bacon grease
  • Paprika
  • Salt & Pepper

Instructions

Peel and slice potatoes (about 1/8” thick)

Slice onion.

Melt bacon grease in frying pan.

Add potatoes and onions

Sprinkle with Paprika to add color

Fry until browned.

Add salt & pepper to taste.
