Quick Gravy for Two

Sometimes you just want some gravy to turn an ordinary dinner into comfort food.   You don’t have to make a ton of it.    While not as good as good old-fashioned “meat drippings” gravy, this is my go-to recipe for a quick gravy.

It goes great with many different dishes such as the Coconut Pork Chops, Meatloaf, or Baked Chicken. Continue reading

Coconut Fried Pork Chops

Ingredients:IMG_0126

  • 2 Pork Chops or Pork Cutlets (Brined)
  • Flour
  • Salt, Pepper
  • 2 Eggs
  • Virgin Coconut Oil

Brine Recipe:

  • 2.5 c warm water
  • 4 Tbps Kosher Salt

Dissolve in warm water then add ice to equal 4 Cups.   Put chops in plastic bag and pour brine in over them.  Refrigerate for at least 1 hour but not more than 3 hours.

Egg Rolls

Egg Rolls

Ingredients:

  • 2 large pork steaks  (or 1 # hamburger) ) (or no meat – go Vegetarian)
  • 1 can bean sprouts
  • 2 C washed, peeled, finely chopped carrots
  • 2 C washed, finely chopped celery
  • 1 medium onion, finely chopped
  • 2 red potatoes, peeled, chopped finely
  • 2 Tbsp butter
  • 1 pack egg roll wraps
  • 3 Eggs
  • 1 Tbsp Water
  • Chicken Broth
  • Soy Sauce

(everything should be chopped no bigger than a pea)
