This is essentially a “Butterball” or “Snowball” or “Italian Wedding Cookie” recipe minus the powdered sugar, and dipped in chocolate instead. For Christmas I usually make this the traditional way with either pecans or walnuts and dipped in powdered sugar instead of chocolate.
Pizzelle are an Italian tradition. Traditionally, a pizzelle iron was like one of those campfire pie bakers, only with just the pizzelle press on the cooking end (vs the pie maker). Families even had their own designs and it was like a family crest. The old pizzelle irons were passed down through the generations.
These are some of the best cookies I ever ate. I made them with Lemon extract in the cookie and glaze. They were so light and delicious and “oh-so-rich”. Unfortunately they did not stick around long enough to snap a picture.
