The good thing about having super salad is that you can pretty much eat as much as you want.   If you are hungry, it is one of the few things you can eat until you are full.  The calories are so low in salad and chicken that it fits into any diet. Lemon Garlic Marinated Chicken Breasts with Rosemary and Thyme

Back in May, my husband and I started changing our diet in an attempt to lose some weight.  We also started working out, bought some exercise equipment, and have been more mindful about moving more and eating less.

Cilantro Lime Marinated Grilled Chicken Thighs

I have been doing great on my diet for the past few months and have learned a few new recipes which are not only tasty, but also can be low in calories (depending on the side dishes they are served with).

One of our favorites around here is cilantro lime marinated grilled chicken.   It’s simple to make, has plenty of flavor, and chicken is full of protein while being low in calories.  Since it’s a marinade and doesn’t have a lot of “evil” ingredients, it only adds about 18 calories.

I buy a bag of limes a couple of times a year and then juice them and freeze the juice into ice cubes.    When I need a little bit of lime, like for this recipe, I just grab a couple of those ice cubes.     You could use bottled lime juice too, but it might taste slightly different than fresh lime.

We like to serve it with brown rice, corn, and black beans.  Sometimes we grill a couple of red peppers and tomatoes and add it to the mix.


Chicken Lime Cilantro Recipe:

  • 1 package of chicken thighs (approximately 16 ounces)  (we buy the Costco organic Chicken Thighs which come in a pre-sealed package)

Into a measuring cup, place the following:

  • 1/2 chopped onion
  • 3 lime ice cubes (melted) (approximately 3 ounces)
  • 1 teaspoon brown sugar
  • 1/2 to 1 teaspoon crushed garlic (depending on how much you like garlic) (I use 1/2 tsp).
  • 2 sprinkles of onion powder (it’s not very much.  If you measured it, it would be about a tip of a spoon worth)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried  cilantro
  • 1 tablespoon olive oil
  • Ground Pepper  (I have a pepper grinder and I use about 10 grinds)

Rinse and dry the chicken thighs and put them into a large ziplock bag (Or similar sealable plastic bag).

Mix up the measuring cup full of marinade and pour into the bag with the chicken.

Seal the bag and move the chicken around in the marinade to coat it well.

Place in the refrigerator for 4-6 hours.   Then take it out of the marinade and grill the chicken until cooked through.

Cilantro Lime Marinated Chicken Thigh Skewers

As my husband and I continue our search for healthier recipes, we are taking some steps outside of our comfort zone and trying new things.  We have made barbecued chicken skewers in the past, but slathering the chicken with BBQ sauce, while not completely evil, is not the best choice due to all the sugar in the sauce.

I searched Pinterest for some other options and got the idea for the Cilantro Lime skewers, but didn’t find a recipe that was perfect for us.   We don’t like a lot of garlic or some of the other spices like Cayenne, so I made up a recipe that we have had a couple of times now.  It’s pretty good.  It’s not “OMG” good, but it is easy, different, tasty,  and it is pretty low calorie.  (MyFitnessPal says it is about 166 calories, 22 g. protein, 1 g sugar, and 2 g carbs.  Not too bad.) Super Salad with Grilled Soy Honey Garlic Chicken

Hubby and I are feeling a bit tubby, so we are watching what we are eating lately.   This new development in our lives has left our old menu with huge holes that gravy laden dishes once occupied.   So we are trying new things and so far, with the help of MyFitnessPal, we are having some success.  (but more on that later)

One of our weekly meals for the past couple of weeks has been Super Salad with Grilled Soy, Garlic Chicken.   It is relatively low calorie (if you use restraint on your dressing amount) and has a ton of flavor.   It is a great weeknight meal for summer and leaves very few dishes to clean up afterward.

We kind of customize it as Hubby and I like different things — also he gets more oz. of meat and more calories than I do in my diet.   My salad (left) has 4 oz chicken.  His (right) has a whole chicken breast (about 7.5 oz). Continue reading
