Cilantro Lime Marinated Chicken Thigh Skewers

As my husband and I continue our search for healthier recipes, we are taking some steps outside of our comfort zone and trying new things.  We have made barbecued chicken skewers in the past, but slathering the chicken with BBQ sauce, while not completely evil, is not the best choice due to all the sugar in the sauce.

I searched Pinterest for some other options and got the idea for the Cilantro Lime skewers, but didn’t find a recipe that was perfect for us.   We don’t like a lot of garlic or some of the other spices like Cayenne, so I made up a recipe that we have had a couple of times now.  It’s pretty good.  It’s not “OMG” good, but it is easy, different, tasty,  and it is pretty low calorie.  (MyFitnessPal says it is about 166 calories, 22 g. protein, 1 g sugar, and 2 g carbs.  Not too bad.) Ingredients:Picture 004

  • Beef Cubes
  • About 8 Cherry tomatoes
  • About 3 Green Peppers
  • About 10 Mushrooms
  • 1 Medium Onion, Chopped
  • 1 C Vegetable Oil
  • 1C Vinegar
  • Salt and Pepper

Chop Round Roast into cubes about the size of marshmallows.

Chop Onion.  Add to Vinegar and Oil.  Add Salt & Pepper.  Add Beef cubes and refrigerate for at least 2 hours. (marinate)

Wash mushrooms, tomatoes and peppers.   Chop Peppers into pieces about the size of the meat cubes.

Using skewers, arrange vegetables and beef chunks.

Cook on grill until meat is done.

Optional:

Heat the marinade in the microwave until oil is boiling.  Let set 5 min.

Spoon 1 Tbsp. of the heated marinade over the meat, or over beef rice-a-roni.
