As my husband and I continue our search for healthier recipes, we are taking some steps outside of our comfort zone and trying new things. We have made barbecued chicken skewers in the past, but slathering the chicken with BBQ sauce, while not completely evil, is not the best choice due to all the sugar in the sauce.
I searched Pinterest for some other options and got the idea for the Cilantro Lime skewers, but didn’t find a recipe that was perfect for us. We don’t like a lot of garlic or some of the other spices like Cayenne, so I made up a recipe that we have had a couple of times now. It’s pretty good. It’s not “OMG” good, but it is easy, different, tasty, and it is pretty low calorie. (MyFitnessPal says it is about 166 calories, 22 g. protein, 1 g sugar, and 2 g carbs. Not too bad.)
