Weeknight “Diet” Meal – Torta Bread Sloppy Joes with Side Salad

One of our new favorite weeknight meals is really just a recipe basic, which has been given some new life by swapping out white bread hamburger buns with Costco torta breads.   This bread is much denser than white hamburger buns and makes a stable “base” for the juicy meat sauce. (Note: We are not on a low-carb diet, just reduced calorie).

I added  a couple of new ingredients to the meat sauce to add more depth to the flavor.   Some of the spices are not entirely necessary if you are looking to simplify or just don’t have something on-hand –I doubt you would miss them too much — but they do add layers of complexity to the overall flavor.  It seems like a “grown up” version of sloppy joes.

My husband and I often “share” recipes on Myfitnesspal, so I have to make my recipes in their tool to be scalable, as he gets more ounces than I do.    Therefore, you will see the below recipe serving size is 1 oz.   When I eat this, I typically eat 4 oz of the meat mixture and he eats 6 oz.   So by making the recipe size to be 1 oz, we can simply put in our own “quantity” when we enter the dinner into the tool  (I have 4 servings of 1 oz, for example).

Make up a nice “side salad”  (about 2 cups of salad) and you have a quick, easy, tasty, and filling dinner for two with enough left-over meat to have a lunch the next day.

Sloppy Joe Meat  (makes about 3 sandwiches)

Serving size – 1 oz.   (Makes 14 oz total)

  • 0.25 cup chopped, Yellow Onion
  • 0.75 c (61g), Kirkland Organic Tomato Sauce  (about 3/4 of the can)
  • 11 oz, Drained  Costco Lean Ground Beef
  • 0.25 cup chopped (149 g), Bell Peppers, Red (or yellow, orange or green)
  • 0.25 tsp(s), Spices, garlic powder
  • 0.25 tsp(s), Spices, onion powder
  • 0.25 tsp(s), Spices, chili powder
  • 0.25 tsp, Cumin
  • 0.25 tsp, Ground Mustard
  • 2 tsp unpacked, Sugar, brown

Brown the ground beef, onion and peppers.  When fully cooked, add the tomato sauce and spices.   Stir well and heat through.   Serve on sliced, warmed torta breads.
