These are some of the best cookies I ever ate. I made them with Lemon extract in the cookie and glaze. They were so light and delicious and “oh-so-rich”. Unfortunately they did not stick around long enough to snap a picture.
Cloud Cookies (Lemon or Almond)
|1C||Butter Softened||½ Tsp||Baking Soda|
|¾ C||Oil||½ Tsp||Cream of Tartar|
|1 ¼ C||Sugar||½ Tsp||Salt|
|2 Tsp||Water||5 ¼ C||Flour|
|2 Tsp||Flavor Extract|
Preheat oven to 325 degrees. Grease Cookie Sheets or use non-stick pans.
Mix butter oil & sugar. Add water and flavoring. Add eggs one at a time. Then add dry ingredients and mix well.
Use cookie scoop and drop onto cookie sheet.
Use glass to press into sugar and tamp down cookie batter.
Bake 10-12 min or until lightly brown on bottom. Do not over cook.
Cool and frost cookies.

|1 Tsp||Flavor Extract||2 C||Powder Sugar|
|1 Tsp||Salt||2 Tsp||Milk|
Mix butter and sugar. Add the rest. Mix until creamy. When cookies are cooled, frost them.
